  1. 150g sunshine Fruit salad
  2. 125 ml (1/2 cup) brandy
  3. 235 g (1 1/2 cups) pitted dates, coarsely chopped
  4. 250 ml (1 cup) hot water
  5. 1 teaspoon baking soda
  6. Melted butter, to grease
  7. 200g unsalted butter, at room temperature
  8. 160 g (1 cup, lightly packed) brown sugar
  9. 3 eggs
  10. 300 g (2 cups) self-raising flour
  11. 1 teaspoon of spices for gingerbread
  12. 1 teaspoon ground ginger
  13. Thickened cream (optional), to serve
  14. 300 ml thickened cream
  15. 160 g (1 cup, lightly packed) brown sugar
  16. 50g of unsalted butter, cut
  17. 1/2 teaspoon ground ginger
  18. 1/2 teaspoon mixed spice

The instruction how to make Sticky date Christmas pudding

  1. Combine the mixed fruit and brandy in a bowl. Cover with plastic wrap and set aside overnight to macerate.
  2. Combine the dates, water and baking soda in a bowl. Set aside for 20 minutes to soften.
  3. Preheat the oven to 180u00b0C. Grease a 2 LITRE (8-cup) pudding basin with butter. Line the base with non-stick baking paper. Use an electric mixer to beat the butter and sugar in a bowl until pale and creamy. Add the eggs, 1 at a time, beating well after each addition. Fold in the mixture of brandy, date mixture, flour, mixed spice and ginger until just combined. The spoon in the preparation of the basin and smooth the surface.
