  1. Chop the raisins, mixed peel and cherries into sultana-sized pieces. Place the pieces of fruit with the raisins in a large bowl, add the rum and mix. Cover with plastic wrap and set aside, stirring occasionally, for 2 hours or overnight, if time permits, to macerate.

  7. Bake in the preheated oven for 45 minutes. Reduce the oven temperature to 140u00b0C and cook for a further 3 hours 15 minutes or until a toothpick inserted in the center of the cake comes out clean. Cover the top of the cake with a piece of brown paper or foil if it starts to brown too quickly.
  8. remove the cake from the oven, wrap the cake in the pan in a large bath towel or several layers of newspaper and leave overnight in a cool place.
  9. remove the cake from the pan and cut into slices to serve.
