  2. 100 g sultanas
  3. 100g of pitted dates, roughly chopped
  4. 80g raisins
  5. 80 g dried apricots, coarsely chopped
  6. 125 ml (1/2 cup) brandy
  7. 100 g butter, at room temperature, cut into cubes
  8. 100 g (1/2 cup, firmly packed) dark brown sugar
  9. 1 tablespoon parisian essence
  10. 2 eggs, at room temperature
  11. 2 tablespoons flour
  12. 1/2 teaspoon ground cinnamon
  13. 1/2 teaspoon ground nutmeg
  14. 105 g (1 1/2 cups) breadcrumbs from day-old bread with the crust removed
  15. 105 g (3/4 cup) pecan nuts, coarsely chopped
  16. Warm vanilla cream, to serve

The instruction how to make Quick-christmas puddings -xxx-

  1. Brush six 160ml (2/3-cup) heat resistant, microwave safe ramekins with melted butter to grease.
  2. Place the raisins, dates, raisins, apricots and cognac in a medium bowl. Cover with a lid or a double layer of plastic wrap, and cook on low/90watts/10% for 20 to 30 minutes or until almost all the brandy is absorbed. Set aside, covered, for 30 minutes to cool.
  3. Use the electric mixer to beat the butter and sugar in a medium bowl until just combined. Add the parisian essence and the eggs, 1 at a time, beating at low speed to mix.
  4. Sift the flour, cinnamon, and nutmeg over the fruit mixture. Add the butter mixture, breadcrumbs and pecans, and use a wooden spoon to mix well. Pour the mixture into ramekins. Cover each with 2 pieces of non-stick baking paper and tie with unwaxed string to secure.
  5. Place 3 ramekins on a microwave rack so they are evenly spaced around the outer edge. Cook over Medium-low or Defrost/350watts/30% for 15 minutes or until a skewer inserted in the centre of the puddings comes out clean. Repeat with the remaining puddings. Serve warm with custard vanilla.
