  1. 1/4 cup flour I used white whole wheat but may be omitted
  2. 2 onions chopped
  3. 4 cloves garlic minced
  4. 2 bay leaves
  5. 12 cups water or vegetable broth, I used water
  6. 3 celery ribs, finely chopped
  7. 1 bell pepper finely chopped
  8. 1/2 head cabbage finely chopped
  9. 1 pound turnip greens chopped, I used frozen
  10. 10 ounces spinach leaves
  11. 1 cup parsley minced, packed
  12. 10 ounces collard greens trimmed and chopped, about 6 cups chopped
  13. 1 tablespoon dried thyme leaves
  14. 1/2 teaspoon cayenne pepper
  15. 1 tablespoon hot sauce optional
  16. 1 teaspoon liquid smoke or to taste
  17. salt
  18. black pepper
  19. 3 cups beans
  20. 1 pound tofu
  21. 2 tablespoons soy sauce reduced sodium
  22. 1 tablespoon agave nectar
  23. 1/2 teaspoon cider vinegar
  24. 1/2 teaspoon liquid smoke
  25. 2 tablespoons water
  26. 4 drops toasted sesame oil optional, but good
  27. 3 teaspoons Louisiana Hot Sauce I used 1 tbsp. of Cajun Power, which is not as hot as Tabasco, though more flavorful
  28. 1 teaspoon minced garlic
  29. 1 package tempeh I used LightLife Flax tempeh, cut into 1/4-inch slices
  30. cajun seasoning Optional:, blend
